Ingredients

  • 15 large tiger prawns, cleaned, deveined, and patted dry
  • 1 tablespoon extra virgin olive oil
  • 2 tablespoons freshly grated ginger
  • 1 tablespoon finely minced garlic
  • 4 tablespoons dark soy sauce
  • 1 tablespoon Shaoxing rice wine
  • 1/2 tablespoon brown sugar
  • 2 tablespoons fresh orange juice
  • 1/2 teaspoon crushed red pepper flakes
  • 2 tablespoons water
  • Fresh cilantro leaves, for garnish

Method

Step 1: Prepare the Marinade
  1. First, in a bowl, whisk together the dark soy sauce, Shaoxing rice wine, brown sugar, orange juice, garlic, ginger, red pepper flakes, and water. This mixture will create a balanced marinade that infuses the shrimp with flavor.
Step 2: Marinate the Shrimp
  1. Once the marinade is mixed, place the cleaned shrimp into the bowl. Make sure each shrimp is well coated. Cover and refrigerate for 15 minutes. This allows the flavors to penetrate deeply.
Step 3: Heat the Pan
  1. As the shrimp marinates, heat the olive oil in a large skillet over medium-high heat. You want the oil hot enough to give the shrimp a nice sear.
Step 4: Cook the Shrimp
  1. After the shrimp has marinated, remove them from the fridge. Add the shrimp to the hot skillet, discarding any remaining marinade. Cook for 2-3 minutes on each side until they turn pink and opaque.
Step 5: Garnish and Serve
  1. Once cooked, remove the shrimp from the heat. Arrange them on a serving plate and sprinkle with fresh cilantro leaves. This adds a touch of color and freshness to the dish.

Notes

  • Don’t Overcook: Shrimp cooks quickly. Keep an eye on them to avoid rubbery results. When they curl up and turn pink, they’re done.
  • Fresh Ingredients: Use fresh garlic and ginger for the best flavor. Garlic powder and jarred ginger won’t bring the same zing.
  • Double the Recipe: If you’re expecting a crowd, make more! Leftovers can be refrigerated for another day.
  • Experiment with Flavor: Feel free to add chili paste or lime juice for an extra kick.
  • Pair with Grains: Serve over rice or quinoa to make a complete meal. The grains soak up the extra sauce beautifully.
