Ingredients

  • 1 large bunch fresh curly kale about 8 to 10 ounces
  • 2 tablespoons cold-pressed canola oil or refined coconut oil
  • 1 teaspoon toasted sesame oil adds a delightful nutty flavor
  • 2 teaspoons mellow miso paste whether white, yellow, or red
  • 2 teaspoons naturally brewed soy sauce or gluten-free tamari
  • 1/4 teaspoon crushed red pepper flakes an optional touch of heat
  • Flaky sea salt, to taste for finishing

Method

  1. Let’s get started! Follow these steps for crispy kale chips.
Step 1: Prep the Kale
  1. Start by preheating your oven to 300°F (150°C). Next, take that large bunch of kale and remove the stems. Tear the leaves into bite-sized pieces. Don’t stress about uniformity; a little variety in size adds character.
Step 2: Wash and Dry
  1. Rinse the kale thoroughly under cold water. Afterward, dry it well; excess moisture will inhibit crispiness. Use a salad spinner or pat them down with a clean kitchen towel.
Step 3: Make the Marinade
  1. In a bowl, whisk together the canola oil, toasted sesame oil, miso paste, soy sauce or tamari, and crushed red pepper flakes if you like a touch of spice. This marinade will give the kale flavor without overwhelming it.
Step 4: Coat the Kale
  1. Place the kale pieces in a large mixing bowl. Drizzle the marinade over the leaves, then toss them gently until every piece is coated evenly. This step is crucial. It ensures every bite has flavor.
Step 5: Arrange on a Baking Tray
  1. Lay the kale pieces in a single layer on a lined baking sheet. Avoid overcrowding; this helps the chips crisp up instead of steaming.
Step 6: Bake
  1. Slide the baking sheet into your preheated oven. Bake for about 15-20 minutes. Be sure to check them regularly. You want them crispy but not burnt.
Step 7: Cool and Enjoy!
  1. Once they are ready, take them out of the oven. Let them cool on the baking sheet for a few minutes. Sprinkle with flaky sea salt before diving in.

Notes

1. Ensure Thorough Drying: Dry kale well after washing to achieve maximum crispiness.
2. Don’t Skip the Marinade: This adds incredible flavor to your chips. Experiment with different spices and herbs!
3. Check Frequently: Ovens can vary; keep an eye on your chips to prevent over-baking.
4. Mix Various Leaves: Combine kale with other greens like spinach for different textures and flavors.
5. Allow to Cool Completely: This ensures they harden up perfectly, enhancing that crunch factor.
