Ingredients
  

Spicy Garlic Shrimp
  • 1 pound shrimp, peeled and deveined
  • 6 garlic cloves, minced
  • 2 tsp chili powder
  • 2 tsp smoked paprika
  • 4 tbsp extra virgin olive oil
  • 3 tbsp finely chopped fresh basil
  • 3 tbsp finely chopped fresh dill
  • Pinch of sea salt
  • 1 tbsp freshly squeezed lime juice
Mashed Potatoes
  • 4 medium-sized potatoes, peeled and diced
  • 1/3 cup whole milk
  • 2 tbsp unsalted butter
  • 2 tbsp unsalted butter
  • 1 small garlic clove, finely chopped optional
  • Freshly ground sea salt and cracked black pepper
  • 1 tbsp sour cream
Salad
  • 4 cups fresh lettuce, thinly chopped
  • 2 1/2 tbsp fresh dill, finely chopped a small bunch
  • 2 scallions, thinly sliced
  • 6 radishes, thinly sliced
  • 2-3 tsp lemon juice
  • 2 tsp extra virgin olive oil
  • Freshly ground salt and pepper
Tzatziki
  • 1 cup plain Greek yogurt
  • 1-2 large garlic cloves, minced
  • 2 heaping tbsp fresh dill, finely chopped
  • 1 tsp olive oil
  • 1/3 cup cucumber, thinly chopped
  • Salt to taste
  • 1 tbsp fresh lemon juice

Method
 

Step 1: Prepare the Mashed Potatoes
  1. First, you need to put those diced potatoes into a pot. Cover them with cold water and add a pinch of salt. Bring it to a boil. 
    This usually takes about 15-20 minutes or until they’re fork-tender. Once that’s done, drain the water and let them sit for a couple of minutes to let any excess moisture escape.
Step 2: Mash Them Up
  1. Return the potatoes to the pot. Add your milk, butter, and sour cream. This is where the fun begins. Start mashing until they’re creamy. 
    Don’t be shy to blend them until you reach your desired smoothness. Add salt and pepper to taste. If you want to kick it up a notch, throw in that optional garlic and mix it well.
Step 3: Sauté the Shrimp
  1. In a separate pan, warm up the extra virgin olive oil over medium heat. Toss in the minced garlic and stir until fragrant. It takes just a minute. Then, add the shrimp. Sprinkle in the chili powder and smoked paprika. 
    Cook for about 3-5 minutes until the shrimp turn pink and opaque. Don’t forget to add your fresh herbs and a splash of lime juice before taking it off the heat.
Step 4: Prepare the Salad
  1. In a small bowl, combine the lettuce, scallions, radishes, fresh dill, lemon juice, and olive oil. Toss it all together. Season with salt and pepper. This bright, crisp salad is the perfect complement to your dish!
