Ingredients
  

Tempura Batter:
  • 1 egg yolk
  • 3/4 cup chilled sparkling water
  • 1/2 cup all-purpose flour
  • 1 cup crispy panko breadcrumbs
  • 1 tsp. garlic powder
Creamy Spicy Sauce:
  • 1/2 cup plain Greek yogurt 2% fat works well
  • 2 tsp. hot chili sauce such as sriracha or chili garlic sauce
  • 1 tbsp. toasted sesame oil
  • Juice of ¼ lemon
  • 1 tsp. honey
  • 1 lb. frozen shrimp
  • 1 tsp. smoked paprika
  • 1 tsp. sea salt
  • 1 tsp. freshly ground black pepper
  • Light olive oil spray

Method
 

Step 1: Prepare the Tempura Batter
  1. First, in a mixing bowl, combine the egg yolk and chilled sparkling water. This combination helps create a light and airy batter.
Step 2: Combine Dry Ingredients
  1. In another bowl, whisk together the flour, garlic powder, smoked paprika, sea salt, and black pepper. This mixture will add flavor and enhance the crispiness of the batter.
Step 3: Mix the Batter
  1. Gradually add the dry ingredients to the egg mixture, stirring until just combined. Don’t overmix! It’s okay if there are a few lumps. This will keep the batter light.
Step 4: Heat the Oil
  1. In a large skillet or deep fryer, heat light olive oil over medium-high heat. You'll want enough oil to submerge the shrimp for frying. The temperature should reach about 350°F (175°C).
Step 5: Dredge the Shrimp
  1. Take your rock shrimp and dip them into the tempura batter, allowing any excess to drip off. Ensure they're completely coated for that lovely crunch.
Step 6: Fry the Shrimp
  1. Carefully place the battered shrimp into the hot oil, being careful not to overcrowd the pan. Fry until they are golden brown and crispy—about 2-3 minutes—turning them for even cooking.
Step 7: Prepare the Spicy Sauce
  1. While the shrimp are frying, prepare the creamy spicy sauce. In a bowl, mix together the Greek yogurt, hot chili sauce, toasted sesame oil, lemon juice, and honey until smooth. Adjust the spice level as per your liking.
Step 8: Drain and Serve
  1. Once cooked, remove the shrimp from the oil and place them on paper towels to drain excess oil. Serve with the spicy sauce on the side for dipping.

Notes

  • Use fresh shrimp: If you can find fresh rock shrimp, they are even better! Just make sure they are properly cleaned.
  • Chill the batter: For an extra crispy texture, refrigerate the batter for about 30 minutes before using it.
