Ingredients

  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced into a paste
  • 1/2 cup finely diced celery
  • 4 green onions, thinly sliced whites and greens separated
  • 1/2 teaspoon sea salt, plus extra to adjust seasoning
  • 1/4 teaspoon freshly ground black pepper, with more as needed
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon crushed red pepper flakes
  • 2 teaspoons Old Bay seasoning, with additional for extra kick
  • 1/4 cup all-purpose flour
  • 2 cups whole milk, warmed
  • 1 cup heavy cream
  • 1 can of creamy-style sweet corn
  • 1 1/2 cups corn kernels fresh or frozen
  • 1 pound shrimp, peeled, deveined, and left uncooked

Method

Step 1: Melt the Butter
  1. Start by melting the unsalted butter in a large pot over medium heat. A heavy-bottomed pot works best to ensure even cooking. Let the butter become bubbly and fragrant. That aroma? It’s the base for a lovely soup.
Step 2: Sauté Aromatics
  1. Once the butter is melted, add the minced garlic, diced celery, and the whites of the green onions. Sauté these ingredients for about 2-3 minutes. You want them softened but not browned. The kitchen should smell amazing by this point!
Step 3: Add Seasonings
  1. Next, sprinkle in the sea salt, black pepper, smoked paprika, crushed red pepper flakes, and Old Bay seasoning. Stir well to coat the veggies in the spices. This step is crucial; it enhances the flavors and builds a delicious foundation for the soup.
Step 4: Thicken the Base
  1. Sprinkle the all-purpose flour over the sautéed mixture. Stir continuously for about 2 minutes. This creates a roux, helping to thicken the soup later. It should be smooth and slightly golden.
Step 5: Pour in the Liquids
  1. Slowly pour in the warmed whole milk and heavy cream. Stir constantly to avoid lumps. Bring the mixture to a gentle simmer, allowing it to thicken. The creamy texture will start to develop beautifully.
Step 6: Add Corn and Shrimp
  1. Once the soup has thickened, add both the canned creamy sweet corn and the fresh or frozen corn kernels. Next, gently fold in the uncooked shrimp. The shrimp should be nestled in, ready to soak up the flavors.
Step 7: Cook Until Done
  1. Cook the soup for an additional 5-7 minutes. You want the shrimp to turn pink and opaque. Stir occasionally, ensuring all the ingredients are well incorporated.
Step 8: Taste and Adjust
  1. Before serving, taste your soup. Adjust the seasoning with extra salt, pepper, or a sprinkle of Old Bay if desired. This is your moment to make it just right.
Step 9: Serve and Enjoy
  1. Ladle the soup into bowls, garnishing with the green tops of the sliced green onions. Serve it warm, alongside that crusty bread I mentioned earlier. Enjoy!

Notes

  • Fresh Shrimp: Whenever possible, use fresh shrimp for optimal flavor. If frozen, ensure they’re fully thawed.
  • Corn Choices: Fresh corn on the cob is fantastic if you can find it. Just boil it and cut the kernels off. Frozen corn is also a great option if fresh isn’t available.
  • Spice It Up: If you like heat, feel free to add more crushed red pepper flakes.
  • Cream Substitute: You can substitute half-and-half for the heavy cream if you want a lighter version.
  • More Veggies: Feel free to incorporate other vegetables like diced bell peppers or carrots for added nutrition and color.
