Ingredients
  

Wonton Filling:
  • 1 tbsp of Oyster Sauce
  • 1 1/2 tablespoons of Toasted Sesame Oil
  • 2 1/2 tablespoons of Freshly Grated Ginger
  • 4 Stalks of Spring Onions Finely Chopped
  • 2 lb of Chopped or Minced Shrimp Prawns
  • 2 tsp of Ground White Pepper
  • 1 Egg White
  • 40 Wonton Wrappers
  • 1 tbsp of Fresh Cilantro Chopped
Ingredients for Spicy Dipping Sauce:
  • 4 Cloves of Garlic Minced
  • 3 tbsp of Peanut Oil
  • 1 tbsp of Toasted Sesame Seeds
  • 2 tbsp of Black Rice Vinegar
  • 1 1/2 tablespoons of Homemade Chili Garlic Paste
  • 1 tsp of Crushed Red Chili Flakes

Method
 

Step 1: Prepare the Filling
  1. Begin by combining the minced shrimp, oyster sauce, sesame oil, ginger, and spring onions in a mixing bowl. Stir in ground white pepper and the egg white. Mix everything thoroughly until well combined.
Step 2: Assemble the Wontons
  1. Lay a wonton wrapper on a clean surface. Place about a teaspoon of the shrimp mixture in the center. Use your finger to wet the edges with a little water. Fold the wrapper in half, pressing out any air, and seal tightly. Ensure there are no gaps. Feel free to get creative with the shapes!
Step 3: Cook the Wontons
  1. You can boil, steam, or fry these beauties. For boiling, prepare a pot of water and bring it to a gentle boil. Place wontons gently in the water and cook for about 3-4 minutes or until they float to the top. If frying, heat peanut oil in a pan and fry the wontons until golden on both sides.
Step 4: Make the Dipping Sauce
  1. In another bowl, combine all the sauce ingredients. Mix well and adjust the seasoning. Taste it—if you like it spicier, add more chili garlic paste or red chili flakes.
Step 5: Serve
  1. Serve your shrimp wontons warm with the spicy dipping sauce on the side. Garnish with sesame seeds and fresh cilantro for an attractive presentation.

Notes

  • Keep Wrappers Covered: To prevent them from drying out, cover the unused wonton wrappers with a damp cloth.
  • Test the Filling: Cook a small amount of the filling in a pan to taste for seasoning before stuffing the wontons.
  • Freeze for Later: If you have leftovers, freeze unboiled wontons on a baking sheet and transfer them to a bag once frozen.
  • Experiment with Fillings: Try mixing in vegetables like mushrooms or bok choy for added flavor and texture.
  • Make a Double Batch: They are a hit at parties, so making extra will never go to waste!
