Ingredients

  • ½ cup unseasoned rice wine vinegar
  • 1 medium-large 1 cucumber or 2 petite cucumbers
  • ¼ teaspoon mustard seeds
  • 2 sprigs fresh dill leaves, coarsely chopped about ¼ cup packed
  • ½ cup cool or room-temp filtered water
  • 2 garlic cloves, lightly crushed
  • 1 ½ teaspoons fine sea salt
  • 1 ½ tablespoons pure maple syrup or granulated cane sugar
  • ¼ teaspoon crushed red chili flakes
  • 1 bay leaf
  • 1 thin slice of fresh ginger
  • 20 About grinds of freshly cracked black pepper

Method

  1. Let's get to it! Here’s a step-by-step guide to creating your crunchy pickles.
Step 1: Prepare the Cucumbers
  1. Start by washing your cucumbers thoroughly. If you’re using a large cucumber, slice it thinly or cut it into spears. For petite cucumbers, you can simply slice them into rounds. The goal is to ensure a bite-sized piece that will absorb the brine beautifully.
Step 2: Make the Brine
  1. In a medium saucepan, mix together the rice wine vinegar, filtered water, sea salt, maple syrup, mustard seeds, crushed garlic, red chili flakes, bay leaf, ginger, and black pepper.
  2. Bring this mixture to a gentle simmer over medium heat. Let it simmer for about 5 minutes, ensuring the salt and sugar are fully dissolved.
Step 3: Combine Cucumbers and Brine
  1. Once your brine is ready, remove it from the heat and let it cool slightly. In a clean jar, layer the sliced cucumbers and the chopped dill. Slowly pour the warm brine over the cucumbers, ensuring they are fully submerged.
Step 4: Seal and Refrigerate
  1. Seal the jar tightly with a lid and let it cool to room temperature. Afterward, pop it in the fridge. The pickles will reach their full flavor after about 24 hours, but if you can wait, a week will deepen those flavors considerably.
Step 5: Enjoy!
  1. Once your pickles are ready, enjoy them as a snack or side. They’re perfect for burgers, sandwiches, or even as part of a charcuterie board.

Notes

  • Choose Fresh Ingredients: The fresher your cucumbers, the crunchier your pickles will be.
  • Experiment with Flavors: Don't hesitate to add spices like dill seeds, coriander, or even a splash of hot sauce for extra zing.
  • Let Them Marinate: Although you can eat them right away, giving them time to sit in the fridge will enhance the flavors.
  • Use Quality Containers: Opt for glass jars. They don’t react with the acidity and preserve the taste better.
Keep an Eye on Them: Make sure the cucumbers are fully submerged in the brine to avoid spoilage.
